
Quinoa Black Bean Chili (serves 4)
Ingredients
- 1 onion, chopped
- ¼ cup avocado oil
- 2 cloves garlic, crushed
- 1 red pepper chopped
- 2 tsp ground cumin
- 1 tsp hot smoked paprika
- 1/2 tsp (optional) chilli powder
- 200g quinoa, rinsed and drained
- ½ cup vegetable stock
- 2 500ml bottles of 12 Veggie Marinara Sauce
- I can of black beans, rinsed and drained
- 1 small avocado, sliced
- Chopped cilantro leaves (for garnish)
Directions
- Sautée onion, garlic and red chilli in oil until soft.
- Add the spices, including chilli powder if you want to spice it up!
- Add in the quinoa, sauce, veggie stock, tomatoes and black beans, and season well.
- Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened.
- Top with sliced avocado and coriander leaves to serve.
