Quinoa Black Bean Chili (serves 4)


  • 1 onion, chopped
  • ¼ cup avocado oil
  • 2 cloves garlic, crushed
  • 1 red pepper chopped
  • 2 tsp ground cumin
  • 1 tsp hot smoked paprika
  • 1/2 tsp (optional) chilli powder
  • 200g quinoa, rinsed and drained
  • ½ cup vegetable stock
  • 2 500ml bottles of 12 Veggie Marinara Sauce
  • I can of black beans, rinsed and drained
  • 1 small avocado, sliced
  • Chopped cilantro leaves (for garnish)


  1. Sautée onion, garlic and red chilli in oil until soft.
  2. Add the spices, including chilli powder if you want to spice it up!
  3. Add in the quinoa, sauce, veggie stock, tomatoes and black beans, and season well.
  4. Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened.
  5. Top with sliced avocado and coriander leaves to serve.
