Ingredients
- 1 Tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups green lentils, rinsed
- 1 can of chickpeas, rinsed
- 1 large sweet potato, peeled and cubed
- 4 cups La Dee Da Moroccan Lentil Soup
- 2 cups vegetable broth
- 2 bay leaves
- 1/2 tsp. turmeric
- 1/4 tsp. cumin
- 1/2 tsp. black pepper
- 1/2 tsp. sea salt
- Fresh coriander, as garnish
Directions
- In a large pot on medium high heat, drizzle a little olive oil and saute onion and garlic until fragrant.. Add the rest of your ingredients, turn the heat up to high and bring to a boil.
- Once it starts boiling, turn the heat down to a low simmer and cook uncovered for about 30/40 minutes, stirring occasionally,until lentils are cooked through and not falling apart.
- Remove the stew from heat and add any additional seasonings you’d like. Top with fresh coriander, serve and enjoy!
